My name is Eadie Manson and I'm a Chef Lecturer here at Fife College. My main role here is that I look after the Level 6 and Level 7 programmes. So, I coordinate, organise them, put them together, and that involves students running menus at our student-run restaurant, The Academy, doing the Thursday night dinners, Friday lunches, and basically just coordinating their programmes and trying to make sure they get through their units.

Before Fife College, I worked at quite a few restaurants along the East Coast. I've travelled extensively through cooking, through being part of the Scotland cooking team, and it's given lots of opportunities…Barcelona, Chicago, Germany, several times.

I go away with Quality Meats Scotland every year and I take students. I work every year at the British Open. I travel every July around the country cooking for golfers wherever The Open is based. So, all those current industry experiences help me stay relevant, keep up to date, showcase what we do here at the College. Also, it's two form…It's good marketing for the college and it's good industry experience for me.

Students coming into the hospitality department can expect to work in a professional manner, learn the basics about cooking, and as they go through the levels, develop their skills, develop their techniques, learn more intricate dishes, and basically get a feel for the hospitality industry.

Students have to be flexible, adaptable, be able to work independently, carry themselves well, and basically just adapt into everyday situation that hospitality has. It's a great sector to get into and there are plenty of employment opportunities. It's available for students - you just need to go out there and grab it.

Best thing about working at Fife College is the opportunity just every year to get a new set of students, try and develop them, give them opportunities, give them experiences that they've maybe not had before, and for these students to develop and move on and hopefully gain employment and remain in touch, and just basically help people learn.
